Recipe: Virgin Rosemary Crush

Refreshing, flavour forward virgin cocktail to enjoy on our porch, by the pool or at our bar - or make it yourself at home to conjure up memories of a visit to The Small

50ml lemon juice
100ml rosemary and ginger syrup

Mix together in shaker and shake vigorously until there is white foam, pour into a tumbler with crushed ice, garnish with a sprig of rosemary.

*To make the rosemary and ginger syrup:
2 parts of sugar to 1 part of water, boil until the sugar dissolves then remove from heat and add rosemary sprigs and ginger slices to the mixture, leave infuse and cool down. After 2 hours, strain the syrup into a container and refrigerate until you need to use it.
